Brunch at Changs

Nice overcast day in Jersey City and as my week off slowly draws to an end I figure I give my smoker a break today.

On today's menu I figure we start off with a nice Waffle brunch and for little miss Chelsea I think she might be ready for her first solids. This is the first major foodie milestone for Miss Chelsea so thank you all for sharing it with us.

Brunch at Changs
Software for waffles

2 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
3/4 teaspoon salt
2 cups buttermilk
3/4 stick (6 tablespoons) unsalted butter, melted and cooled to room temperature
2 large eggs
Vegetable oil Spray for waffle iron

Hardware:
Waffle Iron

For topping
2 tablespoons unsalted butter
2 firm-ripe large bananas, cut diagonally into 1/3-inch-thick slices
1 1/4 cups pure maple syrup

For the waffles mix the dry team then the wet team and mix together and pour in 1 cup increments into your preheated waffle iron. Be sure to spray first and flip.
 

For the topping melt the butter in a pan and sautee the sliced bannanas. Pour over waffles with hot maple syrup.
 
Software for baby gruel AKA Rice cereal


Brown Rice
Water
Mommy Milk or formula

Hardware:
Food Processor
Pot

For the baby rice cereal. Place however much raw brown rice into a food processor and blitze until powdery. You can make a bunch in advance and store in an airtight can. It works for jasmine, basmati etc. Boil 1 cup of water and add 1/4 cup of rice for 10 minutes until the consistency of a paste. Add formula or milk to it as you like to make it looser or thicker.  Wait until complete cool before servering. Good luck! Youre baby is now on the path to foodie-dom.
